If you need the ones for round rails you can get those and not be forced to get a saddle with oval rails. Or vice versa.

Carbon rails are usually ovals. Posts that clamp vertically don't care how high the rails are, but posts that clamp horizontally have a side cutout that needs to be the correct size and shape for the rail.

And rails may, depending on design, produce stress concentrations that can damage carbon rails.
